Ingredients

  • 2 tablespoons olive oil

  • 1 head cauliflower, cut into large florets

  • 2 cups yellow onion, chopped

  • 1 tablespoon fresh thyme, chopped

  • 6 garlic cloves, chopped

  • t tablespoon ground turmeric

  • 1 quart vegetable stock, unsalted

  • 1 cup coconut milk

  • 1 tablespoons sriracha

  • salt and pepper to taste

  • microgreens and toasted pepitas for garnish

Directions

  • Heat oil in a large saucepan over medium-high heat
  • Saute onion, turmeric, thyme and garlic until translucent (about 5 minutes)
  • Add cauliflower florets, sriracha, coconut milk & stock to the saucepan
  • Simmer until cauliflower is tender
  • In batches, puree the soup in a high-speed blender.
  • Cool soup slightly and serve with toasted pepitas and microgreens
