Turmeric & Cauliflower Soup with Microgreens

2 tablespoons olive oil
1 head cauliflower, cut into large florets
2 cups yellow onion, chopped
1 tablespoon fresh thyme, chopped
6 garlic cloves, chopped
t tablespoon ground turmeric
1 quart vegetable stock, unsalted
1 cup coconut milk
1 tablespoons sriracha
salt and pepper to taste
microgreens and toasted pepitas for garnish
Directions
- Heat oil in a large saucepan over medium-high heat
- Saute onion, turmeric, thyme and garlic until translucent (about 5 minutes)
- Add cauliflower florets, sriracha, coconut milk & stock to the saucepan
- Simmer until cauliflower is tender
- In batches, puree the soup in a high-speed blender.
- Cool soup slightly and serve with toasted pepitas and microgreens
