Fried Green Tomato Biscuit with zesty horseradish remoulade

- Fried Gren Tomato:
• 12 slices green tomatoes
• 1 cup all purpose flour
• 1 tablespoon cajun seasoning
• 1 cup buttermilk
• 1 egg
• 1 cup cornmeal
• 2 cups breadcrumbs
- Biscuits:
• 2 cups all purpose flour
• 1⁄4 teaspoon baking soda
• 1 tablespoon baking powder
• 1⁄4 teaspoon salt
• 6 tablespoons unsalted butter
• 1 cup buttermilk
- Horseradish Remoulade:
• 1⁄2 cup mayonnaise
• 1 tablespoon capers
• 1 tablespoon sriracha
• 1 tablespoon horseradish
• 1 tablespoon lemon juice
• 1 tablespoon pickle relish
• 1 tablespoon apple cider vinegar
• 1 teaspoon stone ground mustard
• 1⁄2 shallot, minced
• salt and pepper (to taste)
Directions
- Fried Green Tomato Directions:
- Sprinkle tomato slices with salt and stand for 5 minutes. In separate bowls, mix
- Bowl 1: flour and Cajun seasoning
- Bowl 2: buttermilk and egg (whisked together)
- Bowl 3: Breadcrumbs and cornmeal
- Dip tomato sliced in flour mix, buttermilk mix, then cornmeal mix. Either pan fry or deep fry each slice and drain on grate or paper towels.
- Biscuit Directions:
- Preheat oven to 450°
- Combine dry ingredients in a bowl, cut the butter into small chunk and cut into the flour until it resembles coarse meal. Add the buttermilk and mix until just combined.
- Turn the dough out onto a floured board. Gently, pat the dough out until it is about 1⁄2 inch think. Fold the dough about 5 times, gently press the dough down to 1 inch thick
- Use a round 2.5 inch cutter, cut out biscuits and place on a sheet pan, bake for 10-12 minutes, biscuits should be light brown.
- Horseradish Remoulade:
- Add the mayonnaise, capers, sriracha,horseradish, lemon juice, relish, vinegar, mustard, shallots and sprinkle with salt and pepper in a food processor.
- Blend until slightly chunky.
