This week we’re at home with the owner and CEO of Catering By Design making her famous one bowl banana bread. It’s delicious and here’s the recipe below for you to make at home.

Ingredients

  • 3 very ripe bananas (I prefer 3 and usually use frozen bananas that I’ve saved up just for this purpose)

  • 1/3 cup melted butter (can be salted or unsalted

  • 1 teaspoon baking soda

  • Pinch Salt

  • ¾ cup sugar (can be reduced to ½ cup if you don’t like it as sweet, but I like it sweet)

  • 1 large egg, beaten

  • 1 teaspoon vanilla extract

  • 1 ½ cup all-purpose flour (spoon flour into measuring cup and level off vs scooping)

  • ½ cup rolled oats (optional…recipe is great without it as well, but I like the nutty texture)

Directions

  • Preheat the oven to 350F and spray a 4×8 loaf pan with non-stick spray
  • In a large-ish mixing bowl, mash the bananas with a fork until smooth.
  • Stir in the melted butter
  • Mix in baking soda & salt
  • Stir in the sugar, beaten egg and vanilla extract
  • Mix in the flour until mostly incorporated then add the rolled oats. Mix just until combined (don’t over mix…just until flour is mixed in)
  • Pour batter into prepared pan and bake on middle shelf for approximately 50 minutes. I like to test with a toothpick at about 45 minutes to make sure it isn’t overbaking. 45-50 minutes should do the trick. Toothpick should be mostly clean when inserted into the center
  • Remove from oven and let cool on a wire rack for about 10 minutes, then remove from pan and let cool completely before slicing.
  • Slather with butter and enjoy!

Notes

  • Recipe can easily be doubled and freezes well (wrap cooled bread with plastic wrap then place in a gallon size freezer bag). Add mini chocolate chips (1/4-1/2 cup) or nuts if you are so inclined.
