Palisade Peach and Olathe Corn Salsa


  • 4 ears of olathe corn (grilled and cut off the cob)

  • 2 palisade peaches, chopped in ½ inch cubes

  • 1 tomato, diced

  • ¼ red onion

  • 1 bunch cilantro, cleaned off the stem

  • salt and pepper

  • 1 squeeze of lime juice

  • ½ jalapeno, seeds removed and diced small


  • Mix all ingredients together in a bowl, season to taste with salt and pepper.(Best if made a few hours in advance)
