Palisade Peach and Olathe Corn Salsa
Ingredients
4 ears of olathe corn (grilled and cut off the cob)
2 palisade peaches, chopped in ½ inch cubes
1 tomato, diced
¼ red onion
1 bunch cilantro, cleaned off the stem
salt and pepper
1 squeeze of lime juice
½ jalapeno, seeds removed and diced small
Directions
- Mix all ingredients together in a bowl, season to taste with salt and pepper.(Best if made a few hours in advance)
